Power Summer Salad
Strawberry, Spinach, Walnut Salad with Strawberry Vinaigrette
Try this quick & easy-to-make salad, it is a perfect side dish for cookouts or for lunch.
Plus it is loaded with omega-3, potassium, magnesium, plant protein, vitamin A, vitamin C and vitamin E. Yum!
3 tablespoons strawberry fruit spread (100% fruit, no sugar added)
1 teaspoon of lemon juice
3 tablespoons cold press organic olive oil
3 tablespoons cider vinegar (or Balsamic vinegar)
Sea salt and freshly ground pepper to taste
8 cups fresh baby spinach leaves (you can also substitute with spring mix or arugula)
1/3 cup red onions slivered
1-1/3 cups of fresh strawberries sliced
1/2 cup coarsely chopped and toasted walnuts
In a bowl whisk together strawberry fruit spread, lemon juice, oil and vinegar. Season with salt and pepper.
In a large salad bowl add spinach and onion. Add salad dressing and toss gently to coat. Add strawberries and walnuts and toss very lightly again. Serve immediately & enjoy!
